Cherimoya Frozen Yoghurt

Ingredients

Serves 2

2 Cherimoyas
125g Caster sugar
500ml Natural Yoghurt
10g Mint
1 Juiced lemon
Raspberries to dress
Waffers

Method

1. Prepare the cherimoya by slicing them in half and scooping out the pulp
2. Make sure you remove the pips and discard
3. Place the cherimoya pulp into a food processor and blend into a puree
4. In a small bowl mix the sugar, yoghurt, mint and lemon juice together and then add the cherimoya puree
5. Pour the mixture into a plastic container and place in the freezer for 1 hour so that it freezes partially
6. Remove from the freezer and mix well so that it churns the yoghurt
7. Place back in the freezer and keep it there overnight
8. Place the yoghurt into a small glass along with the raspberries and then finish with a waffer
