Skewers of baby mozzarella, cherry tomatoes and persimon wrapped in Parma ham

Makes 10 skewers

Ingredients

For the skewers:
150ml/ ¼ Pint olive oil
2 Garlic cloves
2 tsp Thyme leaves
2 Lemons, 1 zested, 2 juiced
20 Baby mozzarella balls
3 Ripe Spanish persimons, cut into cubes
10-12 slices Parma ham, cut in half lengthways
20 Cherry tomatoes
Pinch cayenne pepper
1 tbsp Roughly chopped flatleaf parsley
Slat & pepper


Method

1. Heat the olive oil in a small pan and gently sweat the garlic, thyme and lemon zest for 2-3 minutes

2. Remove the pan from the heat and stir the lemon juice through, then allow to cool

3. Pour the mixture over the mozzarella balls in a bowl and season with the cayenne pepper and parsley. Leave to marinade for a minimum of 2 hours, ideally overnight

4. Wrap a piece of Parma ham around each piece of persimon

5. Add the mozzarella balls, Parma ham wrapped persimon and cherry tomatoes alternately to a skewer and season to taste
