Autumnal persimon salad

Ingredients

Two persimons, peeled and sliced into thin strips

1 Hass avocado, diced

100g of baby leaf spinach

200g cherry tomatoes, halved

Juice of one lime

A large handful of parsley, chopped

A large handful of coriander, chopped

1 small red onion, finely chopped

6 tablespoons of olive oil

Method

1. Mix together the persimon, avocado, spinach and cherry tomatoes.

2. In a sealed container, shake together lime juice, parsley, coriander, red onion with the olive oil, before stirring into the salad
