Persimon Fool

Ingredients

2 persimons, peeled and slices into chunks

4 tbsp hot water

2 oranges, zest only, divided in two

2 tbsp caster sugar

200ml double cream, whipped

2 tbsp icing sugar

2 ginger biscuits, crushed

Method

1. Place the persimon, water, half the orange zest and caster sugar in a frying fan and cook for approximately four minutes, or until soft

2. In a small bowl, combine the icing sugar and the remaining orange zest together with the whipped cream

3. To serve, press the crushed biscuits into the base of a tall glass, spoon the persimon over, then top with the cream mixture
