Persimons baked with honey
Serves 4
Ingredients
4 Ripe Spanish persimons
4 Cloves
4 Cardamom pods, crushed
Pinch of golden caster sugar
Pinch of ground cinnamon
60g/4 tbsp Clear honey
290ml/10fl oz boiling water
Whipped cream or vanilla ice cream to serve
Method
1. Preheat the oven to 200°C/400F/Gas 6
2. Slice the top off the persimons and add a clove to each fruit and place them into an ovenproof dish
3. Scatter the broken cardamom pods over the persimons and sprinkle with the cinnamon
4. Dissolve the sugar in a small pan with the honey and water and bring to the boil, then boil for 2 minutes
5. Pour the syrup over the persimons and bake in the oven for 1 hour or until the fruit is tender. Baste the persimons every 15 minutes with the syrup
6. Serve warm with cream or vanilla ice cream and pour a little more syrup over the top to finish
