Picota Cherry Bellini

(Serves 4-6)

Ingredients
1 Bottle of chilled Spanish Cava
450g/16oz Picota cherries, halved and stones removed

Method
1. Place the cherries in a blender until as smooth as possible.
2. Using a spoon, separate the blended cherries into the champagne flutes, filling each glass by roughly one third. Then top up with the Spanish Cava, stirring as you pour.
3. Serve at once.
