Upside Down Plum Pudding

Ingredients

75g/2½ oz caster sugar

25g/1oz butter

2 plums, halved and stones removed

150g/5¼ oz self-raising flour

1 tbsp brown sugar, soft

2 eggs, beaten

4 tbsp milk

Method

1. Preheat the oven to 180c/350f/Gas mark 4.

2. Melt together the caster sugar and the butter in a frying pan over a small heat.

3. Then add the plums and cook for about 5 minutes until caramelised.

4. Whisk together the flour, brown sugar, eggs and milk and then pour this over the caramelised plums.

5. Place the frying pan containing the mixture into the oven and cook for 10 minutes until golden brown.
