Lamb with Sweet & Sour Plums with Runner Beans

Ingredients

200g/5½ oz lamb chop

1 tbsp olive oil

Salt and pepper

50ml red wine

1 tbsp brown sugar

1 tbs cinnamon

1 plums, stoned and sliced

Method

1. Preheat the oven to 200c or gas mark 6

2. Rub the lamb with olive oil and season to taste

3. Place the lamb in a small frying pan and place over a high heat to fry for 2 minutes on each side of the meat.

4. Then roast in the oven for 5 minutes.

5. To make the sauce pour the red wine into the hot frying pan. Add the sugar, cinnamon and plums. Stir this together until it becomes sticky.

6. Once the lamb is cooked place the sauce over the lamb and serve.
