Apple and Plum Pudding

Ingredients


120g Caster Sugar
120g Self Raising Flour
120g Margarine
2 Medium Eggs
2 Large Apples
180g Plums
1 tsp ground cinnamon

Method

  • Preheat the oven to gas mark 5/190c.
  • Cream together the margarine and caster sugar until a pale mixture is formed.
  • Then beat in the eggs.
  • Next begin by folding in the flour and then add some cinnamon for flavour.
  • Lightly grease an ovenproof dish.
  • Prepare the fruit by washing and cutting the plums in halve, making sure to remove the stones. Then peel the apples, core them and cut them into slices.
  • Place the fruit into the dish and mix together.
  • Then pour the sponge mixture over the fruit in the dish.
  • Place in the oven for 40 minutes or until the sponge is golden brown in colour and the fruit is tender when touched.
  • Serve warm.
