Brie and Plum Tart with Basil Pastry

Ingredients


For the pastry:

200g Flour
100g Butter
1 Large Egg
1 tbsp Olive Oil
Basil Leaves
Pinch Salt

For the topping:
2 Plums
55g Brie

Method

  • Preheat the oven to Gas mark 6/200c
  • Take the flour, butter and salt and mix together until the mixture starts to look like breadcrumbs.
  • Then place this mixture into a food processor and add the egg and also basil leaves.
  • Mix this together until dough is formed.
  • Then remove the dough from the processor and roll out to make a circle disc, which is around 15cm wide.
  • Place the disc into a small frying pan and place over a small heat frying each side for 2 minutes.
  • Meanwhile wash the plums, cut them into halves and remove the stones.
  • Also cut the Brie into slices.
  • Place both the plums and Brie over the pastry disc and then place on a tray and put in the oven for 10 minutes.
  • Remove the tart from the oven and serve warm.
