Raspberry & Strawberry Oaties

(Makes approx 10-15 squares)

Ingredients

225g/8oz self-raising flour a pinch of salt

175g/6ĵoz sunflower margarine, plus extra for greasing

175g/6ĵoz rolled oats

175g/6ĵoz caster sugar

300g/10½oz fresh raspberries and strawberries

Method

1. Grease a Swiss roll tin and preheat the oven to 190C/375F/Gas 5

2. Mix the flour and salt and roughly rub in the margarine.

3. Stir the oats and sugar into the mixture and use your hands to combine (it will be a thick doughy mixture).

4. Press half of the oat mixture into the prepared tin. Sprinkle over the raspberries and strawberries, squashing slightly to release the juice. Cover with the remaining oat mixture then press down firmly.

5. Bake for 20-25 minutes until golden brown. Leave to cool for 10 minutes then cut into squares.

Berry Smoothie

(Serves 1)

· 100g each raspberries and strawberries

· 50-75ml milk

· 1tsp lemon juice

Blend all the ingredients together in a blender or food processor until smooth, Drink immediately for a refreshing, delicious taste of summer.
